Japanese - How to Prepare Bean Sprouts

These come in cans, but it is better to make
them fresh at home, and it is easily done.

Take ordinary white beans, or dried lima beans,
and soak over night in lukewarm water.
In the morning take a large cloth, wet it, and set it on a table.
Over this spread the beans.
The cloth must be kept wet.
In a night or two the beans will have sprouted.
Use the sprouts as directed in the chop suey recipes.
