1. Season meat with salt and pepper on both sides.

2. Lightly coat frying pan with vegetable oil or non-stick cooking spray.

3. Preheat pan over medium-high heat until very hot.

4. Add meat.

5. Do not add liquid and do not cover.

6. Reduce heat to medium and cook for time given, turning meat occasionally.
