Pan Fried Fish

2 pounds

1 tsp Salt

1/4 tsp Black Pepper

1 Egg

1 tbl Water

1 cup Flour or Cornmeal

1/4 lb Butter or Margarine

         (as needed)


1. Sprinkle both sides of fish with salt and pepper.

2. Beat egg and water.

3. Dip fish into egg, then coat with flour or cornmeal.

4. Heat butter or margarine (1/8 inch) in frying pan.

5. Fry fish over medium heat, turning fish once, until brown on both sides.

10 minutes

Baked Fish

1 pound

1/2 tsp Salt

1/8 tsp Black Pepper

2 tbl Butter or Margarine

1. Sprinkle both sides of fish with salt and pepper.

2. Melt butter or margarine.

3. Dip fish into butter or margarine.

4. Arrange in ungreased shallow baking pan.

5. Pour remaining butter or margarine over fish.

6. Bake uncovered in 350 degrees oven until fish flakes easily with a fork.


25-30 minutes

Broiled Fish

1 pound

1/2 tsp Salt

1/8 tsp Black Pepper

2 tbl Butter or Margarine

1. Sprinkle both sides of fish with salt and pepper.

2. Melt butter or margarine.

3. Coat broiling rack and pan lightly with vegetable oil

    or non-stick cooking spray.

4. Place fish on rack in broiler pan.

5. Brush fish with half of the butter or margarine.

6. Broil 4 inches from the heat for 5 minutes.

7. Turn fish over on broiler rack.

8. Brush fish with remaining butter or margarine.

9. Broil for another 5 minutes until fish flakes easily with a fork.


10 minutes

Poached Fish

1 pound

1/2 tsp Salt

1/8 tsp Black Pepper

Water

1. Heat 1 1/2 inches water, salt and pepper to boiling in 10 inch skillet.

2. Reduce heat.

3. Arrange fish in single layer in skillet.

4. Simmer fish uncovered until fish flakes easily with a fork.


4-6 minutes

Microwaved Fish

1 pound

1/2 tsp Salt

1/8 tsp Black Pepper

2 tbl Butter or Margarine

1. Sprinkle both sides of fish with salt and pepper.

2. Melt butter or margarine.

3. Brush fish on both sides with butter or margarine.

4. Arrange fish in a single layer in a shallow baking dish.

5. Cover with vented plastic wrap.

6. Microwave on High until fish flakes.


2-5 minutes

Deep Fried Fish

2 pounds

1 tsp Salt

1/4 tsp Black Pepper

1 cup Flour

1 cup Dry Bread Crumbs

2 Eggs

Vegetable Oil

1. Heat 2 to 3 inches oil in deep fat fryer or kettle to 375 degrees or

    heat 1 1/2 to 2 inches oil in skillet until hot.

2. Slightly beat the 2 eggs in a bowl.

3. Mix flour, salt and pepper in a bowl.

4. Put bread crumbs in a bowl.

5. Coat fish with flour mixture, dip into eggs, then coat with bread crumbs.

6. Fry in deep fat fryer, kettle or skillet until golden brown.


4 minutes

Oven Fried Fish

1 pound

1/2 tsp Salt

1/8 tsp Black Pepper

1/4 cup Milk

1/2 cup Dry Bread Crumbs

2 tbl Butter or Margarine

1. Melt butter or margarine.

2. Stir salt and pepper into milk.

3. Dip fish into milk mixture, then coat with bread crumbs.

4. Place in well greased oblong pan, 13x9x2 inches.

5. Pour melted butter or margarine over fish.

6. Pre-heat oven to 500 degrees.

7. Place pan on oven rack that is slightly above middle of oven.

8. Bake uncovered until fish flakes easily with a fork.


10-12 minutes
